Muesli Slice
Ingredients
1 cup self raising flour
1 cup rolled oats
1 cup shredded coconut
1 cup mixed dried fruit (recommended: cranberries, currants, sultanas, diced apricot, chopped dates, chopped figs)
1/2 cup raw sugar
125g melted butter
1 large egg, lightly whisked
1 tbsp golden syrup or maple syrup
1/3 cup mixed seeds (or chopped nuts) (recommended: pepitas, sunflower, poppyseed, slivered almonds)
1 heaped tsp hemp seeds, optional
1 heaped tsp bee pollen, optional
Method
Preheat oven to 160 degrees (or 140 degrees fan forced).
Grease and line a rectangle slice tray with parchment paper.
Combine the flour, oats, coconut, fruit, seeds, sugar (and hemp seeds and bee pollen if using) in a large bowl.
Add in the egg, melted butter and golden syrup and mix until combined and there are no dry spots (I start with a wooden spoon before caving and using my hands!)
With damp hands, press mixture into prepared slice tray and bake for 30 minutes or until golden brown.
Allow slice to cool completely in tray before removing and slicing - I recommend using a serrated knife to gently get through the surface for cleaner cuts and less crumbling.
Wrap slices into parchment paper for lunchboxes. Store in an airtight container for up to a week.
